Apple Pie is one of our favorite dessert. We have two apple trees, and start harvesting some apples every fall. I like to make a batch of apple pie filling, freeze it; then make some apple pie pockets or apple turnovers when we want to enjoy some. Apple pie filling can be made in a batch, you can freeze it; just defrost before making apple pie. This recipe has cinnamon, you can skip it for those who donot like cinnamon.

Apple Pie Filling

Preparation Time: 20mins

Cooking Time: 15mmins

ingredients

Apple: 600g
Sugar: 120g
Unsalted Butter: 20g
Cornstarch: 20g
Water: 40g
Fresh lemon juice: 2tsp
Salt: 1/2tsp
Cinnamon: 1/2tsp(optional)

instructions

Peel apple, and cut into small pieces; I like to cut into less than 1cm pieces, it is fine to have a little larger pieces.
Prepare the cornstarch slurry, mix 20g cornstarch with 40g water. Set aside.
Pre-heat a pan with medium heat for 2mins, add 20g butter, cook until melted.
Pour apples into the pan and cook for about 1-2mins.

Add 120g sugar, mix well, cook under medium-low heat for 5-10mins until apples become soft, and there is some amount of juice/liquid left. The cooking time depends on the size of apple, it is likely to take longer if the apples chunks are larger.
Pour the cornstarch slurry into apples and stir together until dissolved. Continue cooking for another 2mins until the mixture is thickened.

Turn off the heat, add 2tsp lemon juice, 1/2tsp salt, 1/2tsp cinnamon; mix well.
Let the apple pie filling cool completely, transfer into a glass container. It can be kept in the freezer for up to 3months.

If you donot have enough apple, you can simple scale all the ingredients based on the amount of apple you have. For example, with 300g of apples, the amount of all other ingredients can be adjust to half.
