This is the traditional French Apple Cake recipe, which is really simple, rich in butter, and super-delicious. It has strong rum flavor, skip rum if you don't like it. French Apple Cake can be served as dessert with some coffee, tea or ice cream; you can also enjoy it as breakfast or brunch.

French Apple Cake

Preparation Time: 20mins

Cooking Time: 40mins

ingredients

Apple: 300g(3medium size Fuji apple)
Butter(unsalted): 1stick(1/2cup)
Sugar(granulated): 120g + 1tbsp for garnishing
Egg: 2
All purpose flour: 130g
Salt: 1/4tsp
Baking Powder: 1tsp
Lemon juice: 1tbsp(optional)
Vanilla extract: 1tsp(optional)
Rum: 2tbsp(optional)

Note: the above ingredients can make one 9″ apple cake.

instructions

Cut unsalted butter into small pieces, pre-soften at room temperature.
Peel the apple, and chop into 1-2cm chunks. Set aside.
In a small bowl, combine 130g all-purpose flour, 1tsp baking powder and 1/4tsp salt.

Add soften butter and 120g sugar into a large mixing bowl. use an electric mixer to beat the butter sugar mixture until light and fluffy.
Add one egg, beat until well combined.

Add 2nd egg, beat until well combined.
Add 1tbsp lemon juice, 1tsp vanilla extract, and 2tbsp rum, beat until well combined.

Add the flour mixture, using the electric mixer to combine well.
Add the chopped apple, combine well with spatula.

Coat a 9″ baking pan with butter or oil spray.
Pour the apple batter into the pan, even the top with spatula. Sprinkle 1tbsp granulated sugar.
Pre-heat the oven to 350°F, bake for 35-40mins, then switch to broil mode for 2mins to enhance the surface golden color.
The French Apple Cake is great to serve when it is warm. It can also be served with ice cream after cooling down.
