Pasta with Fresh Basil Pesto

Made with fresh basil leaves from the garden, the pesto sauce pasta tastes great. It is super-easy to make fresh pesto sauce at home, simply using a food processor to blend all ingredients, then adding some pasta, a quick and delicious pasta dinner is ready.

Pasta with Fresh Basil Pesto
Preparation Time: 5mins
Cooking Time: 10mins

ingredients

  • Fresh basil: 50g
  • Cashew nuts: 40g (other nuts like almond, walnuts, pine nuts work too)
  • Shredded parmesan cheese: 30g
  • Garlic: 5cloves
  • Olive oil: 3tbsp
  • Angle hair pasta: 150 (other pasta like Rotini, penne works)
  • Unsalted butter: 20g
  • Salt: 1/4tsp
  • Blackpepper: 1 pinch

Note: pasta from above ingredients can serve 2people.

  • Clean basil leaves and dry it.
  • In a food processor or blender, add 50g basil leaves, 40g cashew nuts, 30g shredded parmesan cheese, 5cloves garlic. Blend the ingredients slowly for about 30sec.
  • Scrape down the sides of the bowl, drizzle in 3tbsp olive oil, and  blend for another 1min.
  • Scrape the pesto sauce into a bowl. Set aside.

  • Cook angle hair pasta in a pot with boiled water as directed, drain pasta. Save 2tbsp pasta water for later.
  • Heat 20g butter on a large skillet until melted.
  • Add pasta, 2tbsp pasta water, 1/4tsp salt, a pinch of blackpepper, stir and combine all ingredients.

  • Transfer pasta into a large bowl, add the pesto sauce into pasta.
  • Toss to evenly coat pasta with the sauce. Garnish with fresh basil leaves, cheese, and nuts before serving.
