Chinese Eggplant with Minced pork(鱼香茄子)

This is a classic Chinese eggplant dish with minced pork, called Yuxiang Qiezi(鱼香茄子). It is so savory and great to serve with rice.

In my recipe, instead of deep-frying eggplant, I pre-steam eggplant which gives super-soft eggplant.

ingredients

  • Eggplant: 350g
  • Ground pork: 150g
  • Garlic: 2cloves
  • Cooking oil: 1tbsp
  • Chili sauce(dou ban jiang): 1tsp
  • Dark soy sauce: 1tsp
  • Soy sauce: 1tbsp
  • Vinegar: 2tsp
  • Sugar: 1tsp
  • Water: 1/3cup
  • Corn starch water: 10g corn starch and 20g water
  • Green onion: 2-3g(optional)

instructions

  • Clean eggplant, slice it into small pieces, 5cm in length and 2-3cm in thick. Place them in a deep dish.

  • Pre-boil 5-6cups water in a pot, bring to the boil. Steam eggplant for 10-15mins until you can easily insert chopstick into eggplant.

  • Prepare other ingredients, peel 2cloves garlic and chop it, chop green onion.
  • Prepare the sauce: in a medium mixing bowl, combine 1/3cup water, 1tsp dark soy sauce, 1tbsp soy sauce, 2tsp vinegar, 1tsp sugar. Mix well.
  • Prepare starch water: in a small mixing bowl, combine 10g corn starch and 20g water, mix well.

  • Pre-heat the pan with medium heat for 2mins, pour 1tbsp cooking oil, add garlic to cook for about 1min. Add chili sauce(dou ban jiang) and cook for 1min.
  • Add the ground pork and stir fry until it turns brown, breaking up clumps with a spatula.

  • Add the steamed eggplant and stir a bit, add the sauce.

  • Bring to the boil, pour in the starch water. Mix well and cook for 1min.
  • Garnish with green onion before serving.
