This is a classic Lemon Pound Cake recipe. It is rich, moist, tender, not too sweet, and fragrant from lemon zest and lemon juice. The light fluffy cake has the perfect texture and it is not hard to make.

Lemon pound cake is one kind of cakes you can serve with coffee in the afternoon, a great dessert for a dinner party. You can also add a scoop of ice cream or yogurt on top of it.

ingredients

Butter(unsalted): 1cup(2sticks)
Lemon: 2 medium size
Sugar: 170g
Egg: 3
All-purpose flour: 240g
Baking powder: 1.5tsp
Salt: 1/2tsp
Milk: 6tbsp

Special tool: 9″by5″ loaf pan

Cut unsalted butter into small pieces, pre-soften at room temperature.
Finely grate the zest from 2 lemons, then squeeze the lemon juice into a small bowl.
In a large mixing bowl, combine 2tbsp lemon zest, 2tbsp lemon juice, 170g sugar, and 1cup butter.

Use a silicone spatula to combine all ingredients.
Use an electric mixer to beat until the mixture is light and fluffy. It takes about 5mins with high speed.

Beat 3 eggs into the mixture, one at a time. Make sure each egg is incorporated before adding the next one.

In a small bowl, combine 240g all-purpose flour, 1.5tsp baking powder and 1/2tsp salt.
Add the flour mixture and 6tbsp milk.
Use a silicone spatula to mix until well combined.

Pre-heat the oven to 350°F
Prepare the loaf pan, coat the 9″by5″ loaf pan with butter.
Cut 9″by15″ parchment paper, line the loaf pan with parchment paper.
Scrape the cake batter into the loaf pan, smooth the top with a spatula.

Bake at 350°F for ~55mins until a toothpick inserted into the center comes out clean.
After baking, let the cake cool for at least 10mins. Run a small knife around the edges of the pan to loosen, then lift the cake using parchment overhang.
Lemon cake can be served when it is warm or cool.
