No need to go to fancy restaurant or dessert store, grab some ingredients in your kitchen and try out the chocolate cupcake at home. It is perfect for any occasion, and can definitely impress your family and friends!

Chocolate Lava Cake(巧克力熔岩蛋糕)
Preparation Time: 30mins
Cooking Time: 7mins

ingredients

  • Dark chocolate: 70g
  • Unsalted butter: 55g
  • Cake flour: 30g
  • Egg: 2
  • Sugar: 20g

Note: the above ingredients can make 5 cupcake, double the ingredients to make 10 cupcake.

instructions

  • Pre-heat some water(1-2cups) in a pot, cut butter and chocolate into small pieces, put into a bowl. Place the bowl into boiled water, melt over medium-low heat, stir until smooth. Set aside to cool down.

  • In a large mixing bowl, combine the egg and sugar. Use an electric beater to beat with high speed, until thick and pale. It takes about 5-10mins.

  • Add the butter chocolate mixture into egg mixture, mix well.

  • Sift cake flour into the mixture from step3, mix until well combined.

  • Place 5 standard cupcake liners into muffin pan, pour the batter into cupcake liner.
  • Place the pan with batter into refrigerator, let it rest for 15mins.
  • Pre-heat the oven to 425°F. I normally start pre-heating the oven when I start refrigerating the batter, since it takes about 10-15mins for oven pre-heating.
  • Bake at 425°F for 7mins.
  • Flip over the cupcake liner, invert the chocolate lava cake onto the plate. Sift powdered sugar on top if desired. Serve immediately.
