Easy Chocolate Madeleine Recipe

Madeleines are small sponge cakes with distinctive shell-like shapes. They are fluffy, light, not that buttery, not that sweet. The beautiful sea-shell shape is perfect for displaying and serving on a special day as brunch or dessert.

There are various flavors of madeleines, like original madeleine, chocolate madeleine, matcha madeleine. Chocolate madeleine has a little cocoa powder and milk compared to original madeleine, making it very chocolate.

Easy Chocolate Madeleine Recipe
Preparation Time: 30mins
Cooking Time: 13mins

ingredients

  • Cake flour: 70g
  • Cocoa powder: 5g
  • Baking powder: 3g
  • Unsalted butter: 85g
  • Sugar: 85g
  • Eggs: 2
  • Milk: 1tbsp(15ml)
  • Lemon juice: 1tsp(5ml)

Special tool: Madeleine pan

Note:  The above ingredients can make 12-15 madeleines.

  • Pre-boil 2cups of water in the pot, cut butter into small pieces and place them in a small bowl.
  • Put the butter bowl into pre-boil water, keep heating for ~10mins until butter fully melted. Set aside.

  • Squeeze 1tsp fresh lemon juice from lemon.
  • Combine eggs, sugar, milk, and lemon juice. Whisk until throughly combined.
  • Prepare 80g cake flour, 5g cocoa powder, and 3g baking powder in a container.
  • Sift the flour mixture into the egg mixture.
  • Using whisk and silicone spatula to mix the above ingredients.

  • Gently pour the melted butter into the batter. Whisk until fully mixed.
  • Place a zipper bag(6.5″ X 5.875″) into a medium size mug(see the picture below), pour the finished batter into the bag.

  • Prepare madeleine pan. Smear a thin layer of butter on the pan.
  • Cut a small opening in the corner of zipper bag, slowly squeeze the batter into the pan. If you fill it 100% full, you can get 12 madeleine cakes; if you fill it 80% full, you can get around 15 madeleine cakes.

  • Place the pan with batter into refrigerator, let it rest for 15mins.
  • Pre-heat the oven to 375°F. I normally start pre-heating the oven when I start refrigerating the batter, since it takes about 10-15mins for oven pre-heating.
  • Bake at 375°F for 13mins, gently scoop the madeleine from the pan with a spoon. You can see the form of madeleines hump during baking. The madeleines have crispy side, spongy and buttery interior. It is perfect to serve with coffee or tea.
