Risotto is an Italian rice dish made with short grain rice, like Carnaroli or Arborio. Carnaroli is not quite as available as Arborio in America; you may be able to get Carnaroli in Italian market like Eataly. Risotto is usually cooked in broth with butter and shallot or onion, and finished by adding parmesan cheese. You can use chicken broth or beef broth whichever you have in the kitchen. If you are vegetarian, mushroom broth works. Risotto is a time-consuming dish since you need to add broth multiple times and stir a little; however home-made risotto is so great, the addition of bacon bites in my recipe make it more savory. It is a wonderful base to other protein and vegetable dishes.
