Scallion Oil Noodle is a classic shanghai dish, know as 葱油拌面 in Chinese. The first time I had scallion oil noodle is in college cafeteria in Shanghai, never had it before that since I grew up in middle-northern part of China.
I was amazed by the umami flavor of scallion oil sauce, it makes the noodle so flavorful. It only takes a few basic ingredients from kitchen, and the scallion oil sauce can be stored for up to 1month in the fridge. With the sauce, quick and delicious noodle dish can be ready in a few minutes.
