Scallion Oil Noodle is a classic shanghai dish, know as 葱油拌面 in Chinese. The first time I had scallion oil noodle is in college cafeteria in Shanghai, never had it before that since I grew up in middle-northern part of China.

I was amazed by the umami flavor of scallion oil sauce, it makes the noodle so flavorful. It only takes a few basic ingredients from kitchen, and the scallion oil sauce can be stored for up to 1month in the fridge. With the sauce, quick and delicious noodle dish can be ready in a few minutes.

It would be great to add a soft-boiled egg/ramen egg as topping. Check out the Ramen Egg recipe if you are interested.

Shanghai Scallion Oil Noodle(葱油拌面)

ingredients

Scallion oil sauce:
Scallion: 6stalk
Vegetable oil: 4tbsp
Dark soy sauce: 2tbsp
Soy sauce: 4tbsp
Oyster sauce: 1tbsp
Sugar: 10g
Noodle:
Thin noodle: 150g

instructions

Clean scallion, dry with paper towl.
Cut scallion into 1inch pieces.

In a mixing bowl, combine 2tbsp dark soy sauce 4tbsp soy sauce, 2tbsp oyster sauce, and 1tbsp sugar.
Heat 1cup vegetable oil in a small pan over medium heat for 2mins.
Add the white section of scallion into oil, cook over medium-low heat for a few minutes until it becomes lightly brown.
Add the green sections of scallion. Continue cooking until golden brown and crisp.

Turn off the heat, add the soy sauce mixture.

Mix together until the sugar is fully dissolved. Remove scallion from the sauce.

After cooling off, store scallion oil sauce in a sealed container. It can be stored in fridge for up to 1month.
In another pot, cook 150g thin noodle as directed. Drain completely.
Put noodles in a large bowl, add 4-5tbsp scallion oil sauce into the noodle, mix well. Top with some scallion and a soft-boiled egg/ramen egg or pan fry a sunny-side egg. Ready for serving. The ramen egg from my blog is perfect for scallion oil noodles.
