Shrimp Vermicelli Napa Casserole is so delicious. As vermicelli and napa absorb the shrimp juice, I love the vermicelli and napa more than shrimp from the dish.

Shrimp Vermicelli Napa Casserole (鲜虾粉丝煲)

ingredients

  • Fresh shrimp: 8-10
  • Napa: 150g
  • Vermicelli: 50g
  • Garlic: 3cloves
  • Fermented chili sauce: 5g(optional）
  • Peppercorn: 5-10
  • Green Onion: 10g(optional）
  • Cooking wine: 1tsp(5ml)
  • Salt: 1/4tsp(1.25ml)
  • Cooking oil: 1tsp(5ml)
  • Water: 1cup(240ml)

instructions

  • Pre-soak vermicelli for 3-4hours.(If you cook for dinner, you can start soaking after lunch).
  • Wash shrimp with cold water, separate shrimp head and body with scissor. Use a knife or scissor to cut the back ridge of shrimp, and remove the dark vein with finger or toothpick.
  • Peel garlic and slice it, slice green onion. Cut napa into thin pieces.
  • Pre-heat the pan with medium heat for 2mins, pour cooking oil(1tsp) into it, put peppercorn, garlic and fermented chili sauce into oil.

  • Cook until aromatic, gently slide shrimp head into oil and cook for 2-3mins.
  • Add shrimp body, cooking wine(1tsp) and water(1cup), cover the pan with lid, bring to the boil with high heat.

  • Add vermicelli and napa, reduce the heat to low and simmer for 5mins.
  • Add salt and mix well, add green onion before serving.
