Simple Moist Blueberry Muffins

This is a simple and quick blueberry muffins recipe. It uses fresh blueberry, the addition of heavy whipping cream and butter makes super-moist muffins.

You can make 8 large big-topped muffins, reduce the ingredients by half to make less muffins or increase the ingredients to make more muffins.

Simple Moist Blueberry Muffins
Preparation Time: 15mins
Cooking Time: 30mins

ingredients

  • Fresh blueberry: 160g
  • Heavy whipping cream: 150g
  • Egg: 2
  • Sugar: 90g
  • Cake flour: 250g
  • Baking powder: 10g
  • Unsalted butter: 110g

Note: the above ingredients can make 8 large muffins

instructions

  • Cut 110g butter into small pieces, microwave for ~90sec to melt. Time may vary depending on the microwave power.

  • In a large mixing bowl, add 150g heavy whipping cream, 2eggs, and 90g sugar. Whisk until well combined.

  • Add the melted butter into the liquid mixture, mix well.
  • Combine 250g cake flour and 10g baking powder, sift into the liquid mixture.

  • Use silicone spatula to combine until flours are all moist. Don’t over mix.

  • Clean 160g blueberry, fold into the batter.

  • Pour the batter into a zipper bag.
  • Place 8 standard cupcake liners into muffin pan.
  • Cut an opening in the corner of zipper bag, slowly squeeze the batter into the muffin pan.

  • Pre-heat the oven to 350°F, bake for 30mins.
